Hi again. I have just finished cookery class. I learnt to cook balinese food. And then I got to eat it. However, Asian food is very high in salt, and I shall be having salad for dinner. No salt. I’ve probably had 2 days’ worth anyway. Anyways, here’s a recipe for all to read.
Bumbu Bali (Basic spice paste)
Ingredients:
25 shallots or onions, peeled and chopped
2 heads of garlic, also peeled and chopped
7 large red chillies, seeded and chopped
5 cm galangal, peeled and chopped or 1 tbls powder version
5 cm lesser galangal, peeled and chopped or 1 tbls powder version
5cm ginger
10cm fresh turmeric, peeled and chopped or 2 tbls powder version
1 tbls coriander seeds
6 candlenuts/ 3 tbls ground almonds
2 tsp dried shrimp paste or thai fish sauce
1 half teaspoon black peppercorns
1 pinch freshly grated nutmeg or powder version
3 cloves or powder equivalent
1 pinch cumin
1 quarter tablespoon sesame seed.
4 tbls oil
To make:
Using a blender or mortar and pestle, pound or blend all the above ingredients except the oil. Heat the oil in a wok or heavy pan, add the mix (bumbu) and cook over a high heat, stirring frequently for 5 minutes, until the mix turns golden. Cool before use. Can be frozen.
